This is answered in the Twisted Tales series, Ariel can only write in ancient runes (i know it’s not official but it was a good book and if you like Disney and want to read something a bit different. It’s written as if they hadn’t stopped Ursula and she’d married Eric, Ariel never got her voice back etc)
Aside from the whole not knowing what dry land things are, where would she get the pen and paper from? She doesn't even know those things exist, or maybe not depending on the time period, so it's not like she would've even known to ask for it, or pull it from her a*s.
She signed the contract with the sea witch. Which was a scroll. And she signed it with a pen. So yeah. She definitely did know what a pen was and what writing is. And she also can definitely write.
