My friend used to work for a dairy company and was responsible of making sure safety was respected on the products they made. She told me they were so worried something could do wrong that the expiration dates on yoghurt were weeks too early.

I've used eggs up to two months past the date. The yolk just doesn't sit as high and when you boil them, they're impossible to peel. To test, first shake the egg, if you feel something moving, toss it. Second put egg in a pan full of water, if it floats (due to gas build up), toss it. Third , if you crack it open, and suddenly all the oxygen is sucked from the room and your nose tries to literally run away, toss it.
