In one recent survey, 54 percent of respondents said they cook more than before the pandemic, while 75 percent said they have become more confident in the kitchen and 51 percent said they will continue to cook more after the crisis ends.

I guess the big question is whether or not we will return to our previous ways once everything goes back to normal. Let's just hope that our palates will have experienced a reset and our hands would have acquired enough skill to retain our new eating and cooking habits. At least a little bit.

Yes! Low carb diet. I also found if you sprinkle grated cheese on a waxed paper plate, it will make cheese crispies that are delicious! My dad used to make the above in a cast iron frying pan as part of breakfast.

Take any grated cheese. Make little piles (about the size of the bottom of a shot glass or a bit bigger if you want) on a sprayed (or parchment papered) cookie sheet Put in oven at 450F /232C for about 5 minutes or until edges are slightly crisp. (Cheese will puddle to flat discs and bubble/ This is good!) Take out, cool. While warm you can gently fold into little bowls, or taco shells or egg roll shape. Fill with yummy other things (cream cheese! or eat as is). Will last for a few days. God help me, I just posted a recipe.... I've gone to the dark side.
