Dr. Mario shared what inspired him to write and research curiosity. “I am a very curious person, and at some point, I became curious about curiosity itself. Curiosity can manifest itself in a variety of ways. For some, it's a desire to understand how the world works that drives their interest in science and technology. Others are drawn to history, literature, or the arts because they are fascinated by the past and the stories that make up our collective human experience.

When learning about curiosity itself, it turns out there are more layers to it. Dr. Mario shared: “There are a few types of curiosity. 'Perceptual' curiosity is the curiosity we feel when things are surprising or ambiguous. 'Epistemic' curiosity is the one that drives scientific research. 'Diversive' curiosity is what we do to avoid boredom, and 'Specific' curiosity is about specific questions. There are more types (e.g. 'Morbid' curiosity, when people gather around accident sites).”

Dr. Livio shared that “perceptual curiosity is associated with an area in the brain that is related to conflict, or hunger, it represents an unpleasant state that we want to get out of. Epistemic curiosity is associated with an anticipation of reward (like when someone offers us a piece of chocolate.”

It depends on the breed, and what they are fed. Not necessarily an indicator of quality.

But what they are fed *does* affect the quality. Farmers market chickens generally get a much healthier diet, and pasture-raised chickens get to forage in the grass for bugs and worms, making their eggs much more nutritious and flavorful compared to the "all-vegetarian fed" chickens in feed lots. Chickens aren't vegetarian. Their feed shouldn't be!

Used to dye goose eggs for Easter not knowing what they were, parents told me they were rabbit eggs. Looking back all I can think is that poor rabbit, that had to hurt! 😱🐇🍳😁

But which one tastes better? I bought watermelon once that the farmers allowed us to sample because it wasn't at ALL red, it was WHITE, but tasted PERFECTLY as watermelon should taste.

That might be a genetic variation though. Orange and yellow flesh watermelons taste amazing, but often don't ship well so you can often only find them at farmers markets. Egg yolks can change color based on a hen's diet.

Serious Eats did a taste test and, when they dyed the eggs green to hide the color, nobody could tell the difference between the farm fresh eggs and the cheap factory eggs.

The top egg has better definition from primary to secondary albumen and iss generally less runny; likely indicating freshness/storage handling quality.

My whole life I couldn't eat eggs from the store, they made me very sick. Tried a REAL egg at 52 and have been living it up! The prices are about the same now and they are from chickens that are happy healthy and loved.

Chickens who eat a lot of plants tend to have darker yolks. Freshness affects the quality of the egg white. The whites of fresh eggs are denser and hold together, old eggs have much runnier whites.

When I was a teenager and lived at home my dad raised chickens. The egg yolk were always more orange than store bought eggs. Don't recall if they taste better.

Chicken feed can have colouring in it so that the egg yolk is bright orange, my sister uses colour free feed and the eggs her free range happy hens produce have the pale yellow yolk similar to the first picture.

Unfun fact: in the egg industry, male chicks are put into either gas chambers or industrial shredders that tear them up whilst alive. All this because they can't lay eggs and are therefore worthless.

Actually, CV Vir's post is wrong. Organic, pasture raised almost always look like the egg on the bottom, while mass produced eggs like those sold in big chain grocery stores look invariably look like the one shown at the top. Check it out yourself

We live near an Amish community. Their eggs cost 25% less and are, on average, 33% bigger by volume. They also taste way better.

A store bought egg might be weeks old by the time it gets to market. The farmer's eggs may have been laid only a few days before. The yolk should orange like this, not yellow. Farm fresh tastes so much better too.

When my grandparents first retired to the country, grandma got herself a few hens. I learned a lot about eggs that I otherwise would never have learned as a city kid, mainly that they come in different sizes.

The corporate ones are less happy and s**t, and less fresh while farm fresh (hence the name) are very fresh and the chickens are usually pretty happy. It's just a freshness thing I'm pretty sure

Home-grown is best but if you can't grow your own, it's nice to get it from a local farmer. Factory eggs are usually lesser quality.
