I've had that, in the 70s, they called them "pannini" even though it means something different here in the states now. We used to buy them at a place on the beach in Formia when I was a teenager. SOOO GOOOOD!!!

Made them for my daughter her whole life, even passing down the name 😆 you just make it exactly like you would a grilled cheese, just use pb&j instead of cheese. **TIP** for the most perfect grilled cheese/LR coat the outside of the bread with a thin, EVEN layer of butter. Edge to edge. Don't use super cold butter. (Margarine will do, but real, salted butter is best.) And then go low and slow. Nonstick pan on its lowest setting. Let it preheat a minute or 2 before adding the sammy. Peek under the edge until the bottom bread is perfectly golden brown, then flip and do the same to the other side. After that you will have the most perfect grilled sammy EVER. I promise! If not, 1 of 3 things happened. Either your butter layer was too thick or was uneven.Or your heat was up too high. Or you didn't peek soon enough to see that it was done/ready to flip.
I just use 4 half tablespoons of butter on each side. My arteries will hate it, but I love it.

But instead of just plain mayo, I make a cilantro aioli with lots of black pepper. If you don't want to try your hand at aioli, just put some cilantro leaves on the sandwich and see if it makes a difference.

Best sandwich I think I've ever had was a torta made in a gas station/cafe in Puebla. They had goats on the roof and made their own cheese.

Since I developed a gluten sensitivity, I have been trying to find decent substitutes for the baked goods I have loved my entire life. Gluten free bread ends up being a quest to just find the LEAST bad tasting brand. Even homemade GF bread can taste bad or crumble too easily. The one that’s OK now for me only comes in small slices—-like only about twice the size of those tiny party sandwich loaves they sell in the deli section of a grocery store. Way smaller than a normal loaf. And hamburger rolls? You can F*****g forget finding a decent substitute. They taste weird, they’re also way too small for an average hamburger, and they soak up juices and just disintegrate, so you end up holding the burger instead of the bun. So I make patty melts instead of burgers, as the GF bread, though small, can accommodate a burger and does not disintegrate or crumble. Same thing, just different bread.
In the US, Trader Joes has excellent GF rolls and other GF baked goods. Don't know where you are located, but many celiac friendly (i.e. no gluten ever on premise) bakeries and restaurants are opening throughout the states. I've started making a lot of wraps with homemade buckwheat crepes (King Arthur Flour recipe) - delicious to me! If you're ever in northern VT, go to West Meadow Farm Bakery in Essex Junction. It's fantastic!

For homemade, I prefer simple. Either tomatoes and basil (or pesto) from our own garden with mozzarella (I sometimes add aragula or parmesan) or guacamole & fried egg (sometimes add bacon). I also like a sharp cheese and paprika or a classic ham sandwich with pickles, cheese and maybe some egg. I prefer to have only a few, high quality ingredients and let the shine. Wouldn't mind buying one of those overstuffed ones, but if I make them myself, I prefer simple ones.
