During the New Kingdom (and later), a chisel was used to break through the ethmoid bone and a hook was used to draw out the parts of the brain that would twist around it (think of using a snake on your drain lines). Then chemicals were put in to liquify the remnants. Before the New Kingdom, the brain was usually removed through the back of the skull. I used to have a video of the process actually being carried out, but I can't find it online.
