    Why are french fries not suitable for breakfast but tater tots are? I should be able to eat whatever I want for breakfast even if it’s not typically a breakfast food because it’s still mostly the same.

    Traditional red-velvet cakes do not use food coloring. The red colour comes from non-Dutched chocolate. The Dutching process is a process by which chocolate is treated with an alkalizing agent to reduce the natural acidity in the chocolate. This process also has the effect of turning the chocolate from a deep earthy red colour to the brown colour that you are used to seeing. A real red-velvet cake has a light citrus flavour, which comes from the cocoa, not from any added fruit, as does the red colour. The use of coloured devil's food cake is a fairly new invention. The again the difference being that devil's food cake is made from chocolate, whereas red-velvet is made from cocoa. You will note that if you buy real cocoa powder, it will have a red colour to it.

    The original red velvet cake is based on a chemical reaction involving cocoa and buttermilk/vinegar. It doesn't include food dye and isn't red so much as a rusty brown. You can find recipes if you include the word "original" in the google search and only consider recipes that call for little to no dye at all (and which fuss a lot about the right type of cocoa and flour and the correct amount of .buttermilk/vinegar). I've been meaning to try it out myself but am not sure of how to get all the ingredients here in Germany.

    The real red velvet is amazing. The sour cream added to turn the cocoa pink adds a lot of complex flavors. Unfortunately, it is almost impossible to find these days, killed by the shamless scam "replica" made with red coloring in the dough.

    It's mostly the correct cocoa that's really hard to find. The acid mix only works with non-Dutch process cocoa, and that seems to be pretty rare these days.

    Most people out of the south do not know how to make a Red Velvet cake. And do not even think about using that cake mix. Red velvet is very tender, has a chocolate base taste, a cream taste, and is very light. I have never had a good Red Velvet out of state nor from a bakery. And most have NO idea about white velvet frosting.

    Yeah, and the shock factor for me personally. One Christmas Eve celebrating with my family, I over imbibed on both beer and red velvet cake.     As a pastry chef, let me elaborate. It's oil and red food coloring. Yes, I know some folks use beet whatnots as coloring, but usually it's a schnit ton of red food coloring. There's not enough chocolate to be chocolate, yet too much chocolate to not be vanilla. Red velvet is indeed bullschnit.

    Red velvet is good... because it's chocolate cake. I'm really hoping everyone knows this by now lol. It's literally chocolate cake with red food coloring and cream cheese frosting. So if you like chocolate cake, you like red velvet. Literally the only thing tastes wise for me is the cream cheese frosting, I prefer it over other frosting. But most chocolate cake comes with butter cream.

    Canned fish is awesome! Not just sardines and anchovies but you can get all kinds of fish in cans, even stuff like clams and even squid! And if you prefer food without too many additives or processing, look at the back of the can, it typically says something like "ingredients: fish, salt, some sort of oil (veg or sunflower or something) and with some, the processing is so minimal the fish is just cooked in the can after sealing during the pasturization process. Try kipper snacks, they kinda have a smokey bacon taste. Fantastic treat/snack

    Approximately .5 ml of peppermint extract added to the mix for a pumpkin pie makes it next level delicious. The reason I consider this controversial is because no matter how many pies get consumed at Thanksgiving dinner with compliments, nobody else does this and I'm pretty sure people don't believe me.
