There's a baker local to me that makes real-deal, traditional Red Velvet Cake and that is not BS. It's amazing and worlds away from what most people think of when they hear ''Red Velvet.' The fake coloured c**p people claim as ''Red Velvet'' is pure nasty and a complete scam.

The original red velvet cake is based on a chemical reaction involving cocoa and buttermilk/vinegar. It doesn't include food dye and isn't red so much as a rusty brown. You can find recipes if you include the word "original" in the google search and only consider recipes that call for little to no dye at all (and which fuss a lot about the right type of cocoa and flour and the correct amount of .buttermilk/vinegar). I've been meaning to try it out myself but am not sure of how to get all the ingredients here in Germany.

Most people out of the south do not know how to make a Red Velvet cake. And do not even think about using that cake mix. Red velvet is very tender, has a chocolate base taste, a cream taste, and is very light. I have never had a good Red Velvet out of state nor from a bakery. And most have NO idea about white velvet frosting.

But a Red Velvet Armadillo cake is a spectacle worth seeing!

As a pastry chef, let me elaborate. It's oil and red food coloring. Yes, I know some folks use beet whatnots as coloring, but usually it's a schnit ton of red food coloring. There's not enough chocolate to be chocolate, yet too much chocolate to not be vanilla. Red velvet is indeed bullschnit.

Adding red dye to regular chocolate cake does not make it red velvet! You need buttermilk! Homemade is far superior to store/bakery junk

Red velvet is good... because it's chocolate cake. I'm really hoping everyone knows this by now lol. It's literally chocolate cake with red food coloring and cream cheese frosting. So if you like chocolate cake, you like red velvet. Literally the only thing tastes wise for me is the cream cheese frosting, I prefer it over other frosting. But most chocolate cake comes with butter cream.
