Health and safety should be an integral part of a restaurant's operation for multiple reasons. First, it’s the moral and ethical responsibility to protect employees and customers from injury and illness. I worked at BK back in the early 90's. They were shockingly clean (at least, the one that I worked at). We weren't allowed to have false nails, we were required to wear a hairnet and a "code blue" was called every 30 minutes. That signaled that we were supposed to stop what we were doing to sanitize our hands. I had never even seen or heard of hand sanitizer before then.
