I've had these! It tasted great! The one I ate had peach and mango pearls with chocolate mud with these coconut macaroons.
But merengue mushrooms have been adorning Buche de Noel for at least a century.
I've made these with almond-flavored meringue to go with a Buche de Noel. They really aren't hard to make.

I used to hate beetroots because I had only eaten the canned beetroots that are in vinegar. Then I once tasted a fresh cooked beetroot and it actually tasted very nice. Beetroot also works as an ingredient to a chocolate cake (just like in this picture) surprisingly well. So now I can eat beetroots but I still hate those vinegar beetroots. :)

In my home town there was a candy maker that made "stone candy" that looked exactly like polished rocks. We used to buy a handful, then head over to a mineralist shop, put the stones in the bins of similar rocks and wait for other customers. When someone would wander up to the bin, we would come by, pick up a "stone" and pop it in our mouths. It was funny until some kid broke a tooth emulating us. Whoops.
These look like little glazed cakes, especially since they're sitting on a kind of cookie crumble soil. I think a rock candy would be a bit basic for a restaurant!
