Recently we had many beautiful crazy food trends. We were charmed by unicorn macaroons, mesmerized by mermaid toasts and intrigued by the darkest ice cream ever. And now one more food trend is taking over the internet.
Unicorn noodles are probably the healthiest colorful food trend so far. The trend was started by The Indigo Kitchen blog post where they explained how these beautiful noodles are prepared. It might be hard to believe, but you only need clear or white noodles and purple cabbage to create such beautiful colors.

Has anyone managed to find out just what these noodles are made from? Are the something other than refined wheat flour? Everywhere I go, looking into this, everyone is swooning over just how healthy they are. Yet nobody seems to know what they are made from, or don't want do spoil the overly positive reviews. If it is made from wheat, it will be a highly refined carbohydrate, and loaded with useless calories. I'm really interested in knowing this one thing about it, if it is supposed to be so healthy.
at least some of these are "clear noodles" or "cellophane noodles", which can be made from a variety of ingredients (all starches, i believe), none of which i think is wheat. They are gluten free. They do have a lot of carbs, not the same type as refined flour, but i am not going to get into a discussion as to whether that is healthy/not healthy since everyone has different nutritional needs.
