I would not freak out and I probably wouldn't notice until someone else said something.
I'd leave them alone unless I was truly a fan of their work. In that case, I'd just say that I appreciate their work, and leave them be.
I would first question myself like is that really a famous person then try to say hi
A Hermitcraft member greets me while I'm at the store. Hmm..... Say Hello back and tell them I love their content! Walk away, think " I JUST FRICKIN TALKED TO A HERMITCRAFT MEMBER " and leave them alone. I have to remember that their human beings.
