FWIW The reddish brown paste is called çiğ köfte in Turkish. It's a mixture of finely minced (not ground) raw meat (beef or lamb, from which every particle of fat and sinew has been removed), pounded together with fine bulgur, pepper and tomato paste, scallions, parsley, and shedloads of garlic and spices. When made properly, it's excellent and deserves all the 🥰s. 😋😋
