30 or 40%% of the population are super tasters. They tend to have more taste buds. Supertasters are less likely to enjoy leafy greens, broccoli, Brussels sprouts, dark chocolate, dark roast coffee, spicy peppers (capsaicin causes physical pain). There are around 25% who are non-tasters (can still taste but less sensitive). The rest are average. It isn't down to what people can cope with but really what people can actually taste. All down to the taste buds. If you need lots of spice you probably have less taste buds or might even be a non-taster or low-taster.

There is also desensitisation. Scientists think that some people are simply born with pain receptors less sensitive, but they lack research to back this up. Researchers DO know that exposing children to more spicy food’s at a young age can desensitize nerve endings, making them more tolerable to spicy foods. For example, Mexican parents give children packets of sugar with red chili powder, which builds up their spice tolerance. This causes the nerve endings in the mouth to die off, therefore allowing a high tolerance to spicy foods from a lack of nerve endings.
