"Mosaic sushi" is the latest trend in Japan right now, but you don't need to like raw fish to enjoy it. All you need is an appreciation for art, because as you can see from the pictures below, that's exactly what it is.

The concept couldn't be simpler. Put some pieces of sushi together in a square and voila, you've got mosaic sushi. Simple, yes, but also totally mesmerizing. In fact, it sort of makes normal sushi look too, well, normal. Let's just hope it goes international soon. In the meantime, we're packing our bags for Japan. Again.

Any great chef will tell you that cooking IS an art, albeit this is not cooked. I never feel like I'm "destroying art" when I eat French cuisine, or at a fine dining table, I think I could totally enjoy this meal!

@Judy Semmens: it is sushi. The Wikipedia reference YOU provide supports that it is the type of sushi on pressed rice called Oshizushi.

    The one that looks a bit jelly-like to me it's actually very tiny fish roe, maybe masago. Then there's also tuna, salmon, shrimp and egg.
