This is a third-rate dish. Not a main dish representing a nation. It's like putting fried tomatoes or in a salad. They could come from all over Europe and beyond. In Italy you can find that dish easily in many homes. Especially in peasant culture.

    I've had almost every part of the animal except the testicles. Fried brain in a flour batter is delicious, the tongue eminently edible, liver is great, kidneys I don't like because often there are hard bits in them, the hart and lungs perfectly palatable. So, I don't know what this dish is but it looks to have some brain.

    Yep! The actual name is "boerenkool", or, literally translated to English; "Farmers kale". It's very cheap and easy to make, so it was perfect for farmers who didn't have as much money as other citizens. :)

    Who the f**k cuts it like that?! At least in Finland it's cut pretty much in the middle, not like this. We call it Laskiaispulla. There's a lot of debate if there should be almond paste or strawberry jam as a filling (+ the whipped cream ofc) but I'm a rebel and use sea buckthorn berry jam as my filling of choice.

    Croquetas are from Spain! Probably passed along. Bechamel with whatever (cheese, squid, egg, chorizo, ham…) you make balls with it, put them in whisked egg, bread them and fried. My great aunt’s where the best!!!
