I have a tip, if your problem is what I think (I could be wrong) but try rubbing rice vinegar on the rolling mat, it helps everything stay together, and acts as a bond.

I have a great appreciation for peanuts and nuts because my doctors once thought I was allergic to peanuts so I was real excited when i got to try peanut m&m's which are now my favorite candy. (turns out I just was having common digestive problems) sorry I know it's a bit off topic :)

It is one of the mother sauce post. It is "velouté" for foreign people and this is just a roux with cooking water, it takes skills to do a perfect sauce, i did it with one leg. Yes my mother is a saint, i'm half a saint for doing it ON ONE LEG
