I've never been able to do raw beef. I used to do raw fish/seafood but then I couldn't do that either starting in my early 20's. It's not the taste or texture, it's this fear of germs/parasites.

You'd love where I grew up--we have what's called a garbage plate and it's basically everything thrown together on a plate. There's a ton of different kinds but I'd say the most popular is burgers/hot dogs (you can also do fried chicken!) on top of mac salad, some form of potato (frebch fries, hash browns etc) and baked beans, and then there's usually a meat sauce, mustard, ketchup on top of the whole thing. My personal favorite is the grilled cheese plate! Sounds disgusting to most ppl but it is SO good 😁!

Have you tried making a lemon glaze for your pancakes? It's not an icing, but a glaze which means it's more liquid. I melt some butter with lemon juice and add in powdered sugar a tablespoon at a time until I have the taste I want while it's still liquid like. I use a pastry brush or basting brush to spread it on my pancakes after I take them out of the pan.

This kinda reminds me of the shrimp patties I make! Cook up shelled and de-veined shrimp however you like, cool, then in a food processor pulse them until broken up, then add some olive oil (splash), mayo, lemon juice, salt, pepper, parsley, dill and cocktail sauce. Pulse until fully combined. Beat up an egg, add some bread crumbs, then combine it all. Chill in the fridge for 1 hour, then form into patties. Can bake or pan fry. Can serve as a sandwich or in a lettuce wrap, on top of a salad, etc.
