I have always loved The Lion, The Witch, and The Wardrobe by C.S. Lewis, so much so that I spent my childhood crawling into closets trying to find that magical door to Narnia. I also imagined Turkish Delight to be the most luscious treat ever (good enough to sell out your family for, apparently.) When I eventually did try Turkish Delight, I was a little disappointed. I decided to re-imagine the White Witch’s tempting dessert ideas by baking this special white cake instead!

    A slice of jewels

    Little jewel-like squares of elderflower-champagne and rose-rose jellies are suspended in the creamy vanilla mousse. The beautiful cake is iced in whipped cream, then topped with crunchy “hoar frost crisps.” I even made the sugar icicle crown to top this edible artwork with!
