What to do with leftover pumpkins from Halloween

This fall salad is delicate while at the same time deliciously decadent.

Hold onto those small sugar pumpkins after Halloween because they are perfect for this salad.

Light, yet decadent, this pumpkin and mushroom salad is classified as comfort food!
