I was chatting with my wife about fantasy novels. "Isn't it strange that these characters are traveling to fight the "big bad" and it doesn't appear the big bad prepared or really does anything. Infinite power and strength and he uses it for... nothing?

"I wish for all the money in the world."

Money is a means to get what you want, not what you want. Same as infinite power.

Writers seem to fail at this point. Please give the evil equal time in the spotlight.

The more "grity" and "real" those books became, the more filled with plot holes and deus ex machina they became. It was initially a children's book. In which case the Villian didn't need to make sense. When it became a teen novel, nothing he did makes sense.
