After boiling, toss into an bowl with water and ice (helps if you stir the ice water before dropping in the eggs *not* the boiling water!)

A little vinegar in the boiling water and then put it in ice water when done. That helps greatly.

And soft boiled get hard.

OK, here’s the secret: once your eggs are fully boiled, take the pan off the stove, and drain the hot water out. Keeping the eggs in the pan, run very cold water over them, to “shock” them. Once they’re cooled, drain the cold water out, and start shaking the pan. That shatters the shells against the sides, to the point they’ll start practically sliding off. You can easily peel off what’s left. My grandmother taught me that decades ago.

You have to run cold water over the egg to get the membrane to separate from it.

Use a pressure cooker, the egg can be fresh out of the chicken and peel perfectly every time
