They managed to animate every strand o hair on Merida's head. Surely they're not shitty artists to the point of where there can't take their craft and their style far enough to correctly represent a person's ethnicity. No, I'm saying the differences are not as easy to show. I don't think they look white either. They are just generally made to look more "Cute" by rounding their faces, enlarging their eyes and decreasing the size of their nose to resemble that of a baby. In the process many distinct racial features disappear, and the final result just looks like a general "raceless" face. Of course, there are some features easier to keep, such as almond-shaped eyes, and dark hair and eye colours. I am not saying it would be impossible to make the girl in the picture look more Asian, but it might prove difficult, especially since the inspiration for the style mainly animates white characters, and since the artist probably gets more commissions from white people, (as she is the only Asian I've seen among these pictures). It is incredibly difficult to capture something you are not used to drawing often.
No the different shade is just because it is difficult to capture the original shade, especially in such lighting. I can't capture my own skin colour perfectly, for heaven's sake.
Plus, if you look at the colour of her back, the artist captured that quite well. And they just aplied the same colour on the face, which is in a bit of shadow on the original picture. They made it more luminous (as if there was light coming from where she is facing too), becasue that looks better on this kind of art than the face being in shadow.
