It isn't hat strange, in my school they serve carambola juice just as frequently as chicha, or lemonade, my grandma sometimes buys it at the store too, haven' seen a place where it isn't sold, same with the Pitaya (dragon fruit). I don't know I guess in other countries it isn't as common, I'm from Perú.
These grow everywhere in Vietnam but there seems to be 2 different cultivars, one specifically for sour dishes and one for sweet. Not about aging either. Have also heard some are more toxic than others. Starfruit do contain toxins that arent good for people with damaged kidneys but its also possible that different subspecies or cultivars may have higher or lower levels of these toxins. We have one of these trees outside our house!

In Indonesia, we call it Belimbing. Some are sweet and some sour. But it's a good medicine for people with hypertension.
