Most cultures worldwide developed theories and preferences about the culinary arts separately. After all, eating is one of those things that is so universal that we simply had to work it out to survive. As with most things that we now consider normal, aesthetic and flavor preferences were often just a reflection of what was available.
A normal person would just eat what was available and cheap, staple foods made from grains. Naturally, over time as agriculture developed, humans wanted to add a little more flavor to practically everything.
