I’ve always done this. It makes it easier to collect the bacon grease to season my 75-year-old cast-iron pans.

There's no substitute for pan frying it. It just doesn't taste the same in an oven.

I dunno about this one - part of the magic of oven bacon is the low-and-slow: give enough time for that fat to slowly render out and then it fries in its own fat. People miss the mark for crispy bacon when they try to pan fry / microwave it too quickly.

I like the grease, that's why I fry it. Not a lover of American bacon though, far too thin.

I've done it both ways, and prefer not using a rack since it always ends requiring too much scrubbing to get clean. Just lay the bacon directly on parchment paper, and turn it over half way thru. Drain on paper towel. Comes out perfect.

I'm not a fan of bacon in the UK, but when I went to America I discovered bacon so crispy it shatters with the fork and I loved it

This never worked for me. The bacon just got stuck to the rack and had to be pulled off in pieces. I just let them wallow in their own fat, then drain them afterward. Let the fat cool and transfer it to condiments cups. Freeze for later.

You can use the bottom of a springform pan, also. Lemon will not only kill the natural fish's flavor, but will also overcook it. If you like your fish lemon-ey, just add some zeste on top instead (grated lemon skin)
