'Curry blend'???? What kind of curry, North Indian, South Indian, Korean, Chinese, Thai??? The word 'curry' is a suffix, it is supposed to be added after the region it is inspired from!

'That'll Do Curry'. Yeah, this kind of recipe(ish) makes me sad and frustrated. A cuisine of a region builds up over hundreds of years, refined and evolved by tons of trial and error by thousands or millions of people to get the perfect balance and then along comes something like this, like a plastic flower.

The Cajun one is completely wrong. Cajun and Creole cooking doesn't typically use cumin or ground coriander seed. Here's the one I use. 4 parts garlic powder 3 parts paprika 2 parts onion powder 2 parts oregano 1 part black pepper 1 part white pepper 1 part cayenne pepper 1 part thyme

I can't follow this. Are the vertical lines dividers? Why are the spice blend titles in different places on each line? This is crappy graphic design!

They are continuations from the previous line where it says "continuation". It's probably more apparent in person when the colors are more visible, but you can see how the continued line matches the color of the section it was continued from.

They missed one: American Spice Blend: "1 Tbsp salt". This seems to be the only spice many American restaurants use.

Seem to recall garam Masala being 7 spices.. cloves, fenugreek, cumin, cardamon, coriander garlic and chili. Came back from central india with this 25 years ago - but I see from Google that there are many variations of the recipe..

Do not follow the Italian spice blend when it comes to making your own pasta sauce. Italian marinara/spaghetti sauce does not have oregano in it. It's bitter and overpowering. The only spice blend you need for marinara is basil and parsley. And always add it during the last 10 minutes.

Also. Don't just read left to right like I just did. Pay attention to the "continued" and where the vertical line is for full spice combination.

Maybe All you fantastic cooks and spice buffs should make your own spice blend chart. That way we could have a taste of different styles and blends

The Cajun stating cayenne to taste is actually great, but possibly misleading, you need a lot of cayenne. A lot. And "to taste" makes it sound minimal.

Wish they would distinguish mild from hot, do not like heavy spices, takes away the food taste, never sure why people don't just eat the stuff on its own if they like it hot.

You can use the bottom of a springform pan, also. Lemon will not only kill the natural fish's flavor, but will also overcook it. If you like your fish lemon-ey, just add some zeste on top instead (grated lemon skin)
