He's not really apologizing. He's doing 'sawadi kop' which is a respectful greeting. (Sawadi ka for females, kop for males.)

The "sawadi kop" bow that you are referring to can also be used as an apology by saying "ka tote", which roughly translates to sorry, I ask for your forgiveness. -Diana, Born in Thailand

There have been instances where elephants have spared people who have harmed them upon apologising with folded hands.

Elephants aren't stupid, they can read a face and gestures like anyone else if not better due to their lack of mind pollution.

Very nice. Showing respect. After all, he did interfere the elephant herd with his noisy motor bike. I like how he's decided to handle the situation, and it seems that the elephants responded to his wonderful, respectful efforts.
