I've made a full course meal of TexMex dishes, with a few salsas to pick, few differently grilled types of meat, and, of course, some guacamole. There were tacos, burritos, and quesadillas.

Pork chiroso stuffed roast chicken

Butterfly whole chicken and stuff softened, pork chiroso under the skin with slivers of garlic. Sprinkle with baking powder (makes extra crispy skin) and other spices. Roast at 350 degrees F. Until internal temperature exceeds 165 degrees. You can also surround the bird with small potatoes or other vegetables.

Naan bread with light mozzarella cheese and thin tomato slices also I don’t take credit for this next one but avocado toast with pomegranate seeds is amazing

I make these nachos called "Monkey Nachos". I start with tortilla chips, then add my cheese of choice, put taco seasoning, put garlic powder. and put green onions and microwave it for 30 seconds.

Not me but my grandma. She makes the most amazing chicken croquettes (croquetas de pollo) I have ever tried. The recipe is from her mother, and her two sisters, my aunt and I also use it but hers are just much better. Everybody agrees and wonders what is the secret.
