I've had almost every part of the animal except the testicles. Fried brain in a flour batter is delicious, the tongue eminently edible, liver is great, kidneys I don't like because often there are hard bits in them, the hart and lungs perfectly palatable. So, I don't know what this dish is but it looks to have some brain.
I can beat that, I've eaten the testicles too! Perfectly edible. I thought brains a bit mushy but everything else is good.
