In the book EATS, SHOOTS, AND LEAVES, the story is told about a passing a farmstand which had a chalkboard which, on the top line, always said "CARROT'S", but the rest of the vegetables listed were always correctly pluralized. This drove the person telling the story nuts: if the person could get it right the rest of the time, why was it always "CARROT'S" at the top? Fortunately it was all explained when she finally met the owner of the farmstand, Mr. Carrot. It was, in fact, CARROT'S.
There's a business not far from where I live, which services (their spelling) "pools, spa's, and decks." Apparently somebody told them that consonants don't require an apostrophe for the plural, but vowels do. *Headdesk*
