It's so that the farmers can inspect the cows stomach contents to ensure they are getting the right in of feed. It also helps when it comes to clovers. Cattle should not eat clovers it has a terrible rectify with their stomach acids and makes them bloat really badly and really quickly, it can be deadly. This allows the farmers to also release any pressure from the stomach in case they've eaten clovers.
