is more about not eating the teflon that gets loos everytime you scratch it, a steel pan well used you can clean till it spakling and it can outlast several of the teflon ones.

Leave alone the stainless steel...theres a unicorn called Cast Iron pan and Dutch oven something...Am not allowed to use them or even clean. The owner ( my flatmate) probably loves them more than she loves herself...

I've used cast iron once (borrowed). It was amazing, but I couldn't lift it (damaged wrist), so I can't use it often enough to warrant the investment

I assume they mean that you have to use a bit more oil, and that you have to wait a bit longer before turning your meat around, to avoid that it sticks to the pan. Something like that.

90% of my cooking is done on cast iron. That doesn't mean everyone should cook on cast iron, it just means I like cast iron!

True, but on an electric stove a heavy cast iron pan can really help even out the heat from the constant on off of the element. Especially great for low temp stuff

A few months ago I went on holiday, to a holiday home with a kitchen. And I do know how to use teflon pans. But the people who rented the holiday appartment before me certainly did not… the teflon was so ruined and scratched that you could see black flakes letting loose during cooking… if there is anyone reading this, who rents out his appartment: please put at least one stainless steel pan in the kitchen!

I went back to stainless and cast iron a long time ago. Never again will I be eating chips of non stick coating or worried about what I stir with.

I have mostly stainless steel cookware, always have, but also have a couple of cast iron pans. Use them for different things. The cast iron is great for frying chicken (like my Southern grandmother), baking rolls and cornbread, or even using as a roasting pan, but for most stovetop applications, I go for the stainless.

Stainless steel has its advantages, especially for "cross" foods like roasted potatoes. For meat or similar I prefer cast iron, as it gives you more pan residue you can turn into a sauce after deglacing, and also retains the heat longer.

The hate for msg is just based on anti asian racism. A doctor invented the idea that it produced headaches with 0 proof whatsoever. This was used as an excuse to attack asian restaurants while many other "western" products have msg. It is been proven since then that what he claimed was a lie.
