"Weighing by volume rather than by weight is a big pet peeve of mine," pie artist Jessica shared with me in an interview. "The chemical reactions involved in baking require precise measurements of ingredients, and depending on how densely people pack flour into their measuring cups, they can be using up to 25% more or less than the recipe actually calls for!" Instead, she suggested using kitchen scales as an alternative. They're cheap. And they're much more precise. This leads to far fewer mistakes in the kitchen.

"Working mis en place can eliminate most blunders amateur cooks make… Issues with timing, forgetting certain ingredients, using ingredients at the incorrect temperature, etc.—all of these mistakes can be avoided when you take the time to prep and lay out all tools and ingredients before you start cooking or baking!" The spices will congeal in their containers from the moisture introduced. Instead put the spices in a separate side container then add to a steaming pot.

Don't send a nice knife through a dishwasher

Don't leave a sharp knife in the sink

Don't leave a knife wet, even ones claiming to be stainless will often rust if left wet.

I have one but I only use it for crafting. It's waaaaaay easier to cut a straight edge through paper with an x-acto knife if you're on a perfectly smooth surface.

I have a tempered glass worktop protector that looks like this. It's NOT a chopping board, it's in place of a trivet (good for up to 230C) when I'm using my hand blender. I'm not tall, so the pan goes directly on the glass top and the glass top makes cleaning up spills easier. I would NEVER consider using it as a chopping board! You don't directly use your counter top as a chopping board either, do you?

Dull knives: Took me a few years to sharpen my knives in a proper manner. I use a 6000/2000 Whetstone Grit. The lower the grit, the coarser the grind. If your knife is dull sharpen with the 2000 and finish off with the 6000. Doing this process takes time to get right, best google it rather than me blathering on.

Dull knives Cause dangerous lacerations! Seems wrong but with a sharp knife you do not have to bear down to cut thereby causing knife to slip into your hand while in a slicing motion

I have a set of plastic cutting boards that are separated by food (chicken, beef, fruit, vegetables, fish, bread, cheese) so that there's no cross contamination while chopping food.

I think people buy glass cutting boards to set odds and ends on...they don't cut on it. I have one; it was given to me and I've made use of it, but I'd never run a knife down it. Gross. The feeling would be akin to nails on a chalkboard.

Or people mixing their cutting boards. Using the same board for raw meat, and then vegetables, for example. Ideally you should use separate cutting boards and wash hands and utensils in between.

I've always had a glass cutting board and really like it... Easy to clean, no cuts were dirt can get stuck in.. Don't really see the problem here?

It dulls your knife really quickly. The tempered glass used for these things is actually harder than steel (especially the crappy stainless steel most kitchen knives are made of). Then again, if you're not used to sharp knives, you probably won't notice the difference. A second reason is that wet glass is unsafe to cut on because it's too slippery. Additionally, though it's counterintuitive at a first glance, dull knives are more dangerous to use than sharp knives. The reason is that you have to put much more force into a dull knife, and if it slips and goes in hand, it cuts more deeply for this reason alone. (Also, a sharp knife will get you a "cleaner" cut, which is less painful and heals more quickly on top of not being as deep.)

Glass and marble boards aren't aimed for use as cutting boards. They are worktop protectors and marble is good for rolling pastry on.

In theory it makes for great cleanup, and doesn't hold the germs like wood or plastic, but It dulls your knives like immediately.

I learned that in the Scouts, it's basic knife safety -- a dull blade is actually more dangerous than a sharp one -- I could never convince my mom of that though, it was very frustrating.

But glass is the safest material for a cutting board. It avoids slits where bacteria could hide, and it is the easiest to clean.

I read somewhere that wood cutting boards are naturally anti-bacterial, they still need to be cleaned of course but the impression I had was that they don’t harbour bacteria like plastic boards do.

You don't have time to boil water when you need to "add boiling water". And it's nice to have the rice ready when you arrive at "serve with rice".

I had a recipe that had 130g of Butter. The recipe said "mix 120g Butter with..." and at the end "use the leftover 10g of Butter to...". I overlooked that I had to use only 120g at the beginning, instead of the whole 130g. So yeah. Read the recipe through before starting.

Unless it's something you specifically need to be mixing or stirring constantly, leave it alone! You'll never get proper color on things if they make more contact with your spatula than your pan.

High heat to sear meat when you want the outside cooked much faster than the inside. Low and slow if you want the meat cooked evenly. Both have their time and place, so make sure you know what you’re going for before picking your cooking method.

Most people put too much salt in their cooking. Use very little and let people add it later if they need it. I've had several meals served to me with so much salt they were inedible.

Also, allow liquids to cool a bit before tasting. Hot vs warm vs cool liquids all taste different. One of my favorite things is Korean Lunchbox Potatoes (Gamja Jorim). Because they are meant to be eaten at room temp, if you taste them while they are cooking, by the time you eat them fully cooled, you may as well be eating a block of soy sauce.

There are such things as smash burgers, but I believe on those, you smash them at the beginning before the fat has a chance to melt so you’re not smashing the juice out.

Pasta should never, ever be rinsed for a warm dish. The starch in the water is what helps the sauce adhere to your pasta. The only time you should ever rinse your pasta is when you are going to use it in a cold dish like a pasta salad or when you are not going to use it immediately

Adding olive oil to pasta water while cooking is pointless. I think the idea was that it was supposed to stop the pasta sticking together but all it does is float on top and serve no purpose at all.

Or, better yet, get a honer to realign the knife and make it last much longer than if you sharpen it regularly. Sharpen around once or twice a year, but hone your knives with each daily use.

Yeah, that's too late. You need to remove things from heat a little earlier than youd think so that the ambient heat continues to do its job. Otherwise you're overcooking it.

Using sugar to take the edge off a highly acidic sauce. Just put a damn carrot in it and let it absorb the acidity instead of covering it with a new flavor.

I like to put in a couple of tablespoons of milk or cream to an acidic tomato sauce. If I want a more rich taste, it might be a bit of parmesan.

I saw a girl burn the hell out of herself because she didn't listen to the Home Ec. teacher. She threw her hot oil in a sink with some cool water running. Boom! Sprayed hot oil all over her arm and neck. Let your oil cool folks.

Don't throw oil down the sink at all! Unless you want to develop a very close relationship with your plumber, not to mention mess up the sewers for everyone else.
